I think you just need to find out what your USP is. Doesn’t matter if there are already hundreds of competitors. If you can offer something a bit different, it will be attractive. Just look at how popular Greggs is.I actually think it should have been Scarlett and Pamela. I don’t see how an Artisan bakery owned by someone who doesn’t even bake is going to go national - I mean, how many independent artisan bakers are there? Thousands!

Well maybe that could be her USP. Each store being unique to that area or the bakers based there. But I think artisan bakeries should stay as independent bakeries and not be mainstream, because it’s nice to see what different ones come up with when you go to a new town or city.
