Let's say they are employed and not freelancers, she says every employee should have time off over Christmas and at least two weeks in the summer. So her ''employees'' most probably already had a two weeks break over the summer. Let's say you get 30 days off in the UK (I believe it might be less than that but it works for the exemple), they'll still only have 15 days off left, not 20.
