My mum used to make mint sauce using the exact same ingredients and I don't ever remember it looking like a saag aloo.

Shes put something properly garrity in it.

My nan made it but never added oil.

Red onion, I think. Possibly chopped in a Nutribullet rather than with a blunt, rusty knife. Which is weird because proper Mint Sauce is only made with mint, salt, boiling water, vinegar and a pinch of sugar.
