The frozen soffrito mix is a godsend! My crocked and crumbled back has put limitations on what I’m able to do in the kitchen, even sitting down. Chopping up vegetables is confined to “rustic”, aka large chunks. Absolutely no finesse or prettiness!The base to many Italian recipes is soffritto which is a mixture of finely chopped carrot, onion and celery. Im a useless cook but I always keep a bag of frozen soffritto in the freezer so that I can still cook at the end of the month.
Two other freezer staples:
- Mediterranean veggie mix - diced onions, aubergine, sweet pepper, courgette and tomato
- Mediterranean style veggies - onions, tomatoes, sweet peppers and grilled courgette slices with rosemary and olive oil (I add garlic and whatever seasoning is close to hand - sauté or shove some in air fryer to cook alongside a piece of chicken plus a few steamed tiny potatoes is pretty much an instant supper for one).

Michael has a very full life at the family Chateau. Between his art, renovations, and rebuilding an organ, he has had a busy time with new friends. Also It is 5 hours away, and it is difficult to get someone to drive him.

Sif has raised about 60% of her pea chicks successfully. It sounded like they want to get the pea chicks into the old hen house at night. The teenager Wedgewood and the semi adults Hansel and Gretel like to be up high with Thor and Sif at night in the wood hanger

A holiday is a break from work. Nati continues to work remotely whilst she’s away, and I continue to make videos. We do talk about having a proper holiday one day, but I like sharing everything with our viewers. But I’ve promised Philip no filming on honeymoon!

I saw. a white hen harrier dive bombing some magpies here the other fay. That's rater unusual round here. The magpies were going mad.If he was turned in I do think he would be euthanized as he is bitey and nuts..... plus Vet eye doctors are very expensive .... I have taken some of my dogs to them over the years ..... I did not hesitate but many people dump them as they can't be bothered or the sad one - cannot afford it.

It was only after the video aired in speculation about the inbreeding of the peacocks and peahens began that suddenly Caroline Gooder shows up in the comments sections talking about Sif being the mother, and then Stephanie Jarvis chiming in under the official CD account, suddenly stating that Ñutty had been missing Sif for a few weeks, and that Sif with always disappear to lay her eggs and reappear with new peachicks and no one would know where her nest was. Total lie. Selmar tracked Sif a few years ago and knew where her nest was and when the eggs had hatched. Also, it wasn’t Sif who had the peachicks this month. How many peachicks died out of last June, 2023 peachicks, if only wedgewood is left? How many were born? 4 or 5? She never mentioned any other peachick deaths in the past year with the exception of the peachick that she filmed dying at the vet office. She has had several peachicks die since she started her YouTube channel 4+ years ago.

I sympathise. I have similar problems with knees and standing and have bought a (rather ugly) "perching stool" to sit on in the kitchen. It has made a big difference and if it wasn't so ugly, I 'd have one in every room!

Waitrose is my online trolley of choice! I did a massive price comparison spreadsheet to prove to a friend that it’s not wildly expensive to shop there (or it doesn’t have to be wildly expensive, if one doesn’t get led astray by extravagant treats!).
Both Sainsbury’s and Tesco do similar frozen Med style veg - I haven’t tried the Tesco version but have had it from Sainbugs. (I think both S and T include aubergine in their frozen Med veg.)
Bone-in, skin-on chicken thighs are brilliant, and I use them lots - much more “forgiving” (it’s virtually impossible to overcook them!) than boneless/skinless which can dry out.
The frozen diced Med veg is a good stand-by to chuck into pasta towards the end of its cooking time. When the pasta is fully cooked, drain, add some seasoning, lots of Parmesan or any grated cheese on top and, VIOLA, you’ve got supper in about 10 minutes with absolutely zero effort. Which, some days, ticks all my boxes.
