@C'est moi have you ever done cassoulet like that? I always use confit de canard, toulouse sausages and potrine de porc. In this region the white beans are called mogettes and a staple in most kitchens. Hope they remembered to come back down and turn the stove off after the 3hrs of simmering. Imagine the stinky cooking condesation
