however these days I don't usually bother with making the temper, and I change the spices up sometimes too. For the one I made the other day I used a couple of tablespoons of garam masala and a couple of a mild Madras powder that I had in. One thing I always do now with any dhal I make (albeit there's only 3 in my repertoire - cauli, aubergine and this one) is stir through some mango chutney at the end. I think it balances the flavours out nicely, but I am a bit of a fan of a sweetish curry. I also often get the kids portions sorted first, then heat up mine and Mr NT's with some dried or fresh chilli.
Talking of spices, does anyone bulk buy them anywhere? I usually get the larger bags from the "world food" section at Morrisons, but seem to be struggling to get hold of them lately, always seem to be out of stock
