Another favourite open faced. Toast and butter a piece of granary bread. Spread with either marmite or Daddies brown sauce and top with grilled or fried tomatoes. Can use tinned tomatoes too.

Used to have an Irish ship in our High Street and they sold Tayto crisps. I loved them.
When I was a child there were three different peanut butter based sandwiches that were popular. They were:- pb and mayo, pb and banana and pb and dill pickles. The latter was usually on toasted bread.

All of them are based on wholemeal bread.
Grilled or toasted: A layer of BBQ sauce, a bit of cheese, some tomato slices, and some arugula on the side.
Sweet option (open sandwich): A layer of honey with truffles, a bit of goats cheese. Some olives on the side.
Sweet-er option: A layer of tahini, drizzled ower with some agave, sliced strawberries or bananas & cinnamon.

An old favourite I used to order from a cafe near my office was a granary roll spread with horseradish, mustard and filled with mixed salad. I had it with their homemade soup and a milky coffee. Haven’t had horseradish in ages.
More back in the mists of time. A woman I used to babysit for as a teenager gave me a cup of tea and buttered granary toast spread with Bovril on cold days. Think that’s the only time I’d ever had Bovril.

My husband is Irish & we flew Aer Lingus & Aer Lingus regional a lot, they used to sell Tayto sandwiches. Unreal
Best crisps on the market IMO
my husbands family are big into Irish dancing and his parents would have travelled the length and breath of Ireland every weekend for feis's that was his staple diet while they were away 
If we’re extending to open sandwiches- I made the mistake/find of my life on lockdown by trying President Creme de Brie. It is insanely amazing. It’s like the ooziest Brie without waiting for it to warm up or ripen but better on an open sandwich than a closed one.
To be honest it’s all I want to eat now for every meal but I suppose I have to have vegetables and balance and stuff.
