I feel like the answer to this is really simple - if you know that some people find the calorie counts triggering (or "an aggressive act" in her words), then ... just don't do the calorie counts? Post the pics and say they're healthy low-calorie meals but don't include the calorie numbers?

Wow, she really doesn’t get it does she. She’s just completely missing the point. I don’t even know where to start.
I think she’s irresponsible and annoyingly self absorbed/tone deaf but I don’t find calorie counts triggering personally. I understand those who do.
What bothers me more, is as others have said, she is clearly completely clueless about healthy weight loss and nutrition based on her own words (and saying she wants to lose weight fast and sustainably, no idea about protein or how to make food healthy without the nutrition team that probably helped on her books in the 00s, when even they had some odd ideas about nutrition that have since been disproved) and yet is positioning herself as being able to essentially prescribe a diet that other people can follow.
Also her emphasis on how the calorie deficit diet is making her “stuffed to the gills” as a big eater. I get she hasn’t been immersed in diet culture and EDs like many of us as she clearly didn’t really need to watch her weight in her 20s and 30s, but this is some fucked up triggering
