I think it’s to do with heat and sunlight? And/or leaving them on the vine. I pop mine in the fridge though, so that’s probably why they don’t carry on ripeningI knew the green is unripe, but I thought red yellow orange were different types. So they're all just one thing?

Green peppers do taste like they're unripe though. That's why I never buy them!The pepper bombshell made me stop eating green peppers. It made me feel like I was eating something that wasn't ripe.
My OH gets on at me soo much for this!!I learned that if I attempt to carry too much I will drop something. I learned it years ago but I still try to carry my phone, my vape, my specs and two half empty cups to the kitchen.
