Fish, mash and peas. Plenty of lemon on the fish and salad cream on my peas. 
Sure, here is the basic recipe but you can tweak it to your liking. I sometimes omit the onions or use kefir instead of yogurt.

Sausage, mash and veg with red wine gravy. Bloody roasting though so not the best meal to have

We had a tray bake- chicken drumsticks, potatoes and parsnips, alongside some roasted cauliflower. All very easy but filling and liked by all. Always a winner!
