Slopalong #3 She doesn't understand beans

Good afternoon one and all!

I made the ‘Cakey Goodness Bread’ from Cooking on a Bootstrap (NOT shoestring) and the ‘Chicken Butter’ from Good Food for Bad Days.

So, the long and boring tale of this Slopalong includes me getting all the ingredients from my usual ‘big Sainsbury’s’ (that I drive to), then realising I had forgotten peanuts, so I got them from my rubbish and higher priced local Tesco (I live in the city centre, seriously though the ‘local Tesco’ shops hiking up prices can eat a pumple).
However, I based the costings on said ‘usual shop’, which is very fair of me tbf.

Wholemeal plain flour was something I would never usually buy (and was pretty expensive), guest lists it as just that with no mention of it being bread flour. The recipe uses plain white flour, not bread, which I was sceptical about.

I considered using Wholemeal bread flour, as I felt like that would give this recipe a fighting chance, but then thought that I probably shouldn’t be trying to help guest out, as crappy councils are somewhat of a sore subject to me currently.
So, duck you Jack, no dice.

Anyway, I did have most of the ingredients in, although I got new yeast as I realised mine was expired, but I don’t feel generous about costing, so based it all on the cheapest you can get from Sainsbury’s as the big shop I hike drive to for most of my groceries, as opposed to skipping that for stuff I had in, other than salt.

The first step of ridding salted peanuts of their saltiness ended up taking longer than I thought.
Incidentally, I did think I could buy unsalted peanuts on the cheap locally as my area is very multicultural, so raw ingredients can be bought in bulk for a really good price, but salted peanuts from supermarkets like Tesco are cheaper as it turns out. So fair enough there guest (why they’re in this recipe at all remains to be seen)

I soaked them for half an hour, before rinsing them thoroughly as instructed.
But, thing is, peanuts are greasy, they excrete grease, so drying them proved tricky, as I was trying to go by the recipes instructions which called for them to be dry.
“How dry?” You may ask, WFK. But soggy peanuts do not a dry do.

Blending them actually went better than I thought, thank god. Looks clumpy here but it broke up easily (like my ex haaaaaa)

I went on to add dry ingredients, including the salt I’d just spent an hour pouring down the drain.

(Sorry about the manky card, I haven't used my Superdrug card since I found out I should just shoplift I was about 17).

I had to make a well. I’m a guttersnipe and don’t know what this means… luckily Jack specified it’s a kind of hole.

I poured warm water and oil into my fan (as usual)

The dough was so unworkable, and I can say wholeheartedly I really did try.
The recipe says to knead for ‘a few minutes’ and I tell you fraus, I did this with all my might for at least fifteen minutes before I ended up with this:

It was so dense and stiff (like my ex haaaaaa) and really hard to knead.
She says you should be able to poke a hole in it and see it spring back.
It didn’t do this, even after a lot of kneading, it was the texture of slightly dry salt dough.
I could actually make a sad face in it.

I was done with trying harder than guest ever has in her life, so used @Walkdengirl ‘s recommended method of proving, as my whole flat is colder than a witch’s tit.

In the wretched thing went, and the method did seem to work really well! I’ll be using it in the future, so thank you Tenderheart.

The rise was much better than I was expecting.
Although it must be said, if I had gone full throttle and used guest’s suggested method I might have set my flat on fire.

I had to apparently cut it once down the middle, with a deep cm cut, I’ve never done with bread before.
I thought it would probably end up looking like a vag, that was optimistic.

Yeah… prolapse.
At this point it did actually smell quite nice, and was hollow to a thumping after the recommended 40 minutes, so I was uncharacteristically hopeful.

Seems cooked!

Thing is, I can’t really show you this through photos, it was awful.
Cakey, it certainly was not.
It was brittle, crumbled everywhere as soon as you touched it. it was so dense, as soon as you pinched it, it was like soggy dough again (I’ve seen enough Great British Bake Off to know that’s not good), it’s very crunchy too.
How on earth this is meant to resemble soft cake and/or bread I don’t know.

Initial taste is just this awful, overwhelming bitterness (like my ex haaaaa) and then you get hints of Wholemeal bread, then gross bitterness again.
It also stinks, I had to chuck it straight in the outside bin because it was turning my stomach, after I ate a couple of slices my whole mouth was claggy and dry. It felt very uncomfortable and I was drinking lime cordial and sparkling water glass after glass, I still felt like I could feel and taste the bread in my mouth hours later.

I’ll post the other half of this, including ratings later, but I have to say somehow this bread was more disgusting than the blended chicken I made.

Please give me a chance to compose myself, then I’ll post the other half of this xxx

"I poured warm water and oil into my fan" and racking up lines of salt had me hooting and honking out loud 😂.

My brain can't quite cope with the hilarity of the canal combined with my absolute rage that her books encourage already struggling people to make vile, inedible rit out of perfectly good ingredients. And why does she love blending everything so bleeping much? You'd think she had no teeth (she definitely has teeth).

I love this thread so much but god she pisses me off getting people who are struggling to afford basics to waste money they probably don't have on making things that don't really qualify as food. The basic recipe on the back of the yeast packet is straightforward and makes decent bread. And the Tesco yeast sachets are currently £1.45 for 8 sachets. That's eight EDIBLE loaves of bread, or eight batches of rolls, with which you could make many peanut butter sandwiches if you're really set on peanuts being involved.

I'd love to see her do Bread Week on Bake Off, she'd make Paul Hollywood cry.

I feel so bad, I’ve forgotten to post about the blended chicken 💔
I’m sorry fraus, this is the granola all over again isn’t it? I have had a very busy and drama filled month though, so you’re not allowed to complain otherwise you’re a hateful far right hole… that’s how it works right?

Okay, to quote Bob Mortimer “my memory is fleeting, a bit like a mouse’s tear on a hot griddle”, but I’ll do my best!

Chicken Butter from tit Food for Days

I didn’t want to be wasteful, so obviously did not use the whole packet as I was instructed to do 🙄 I was making jambalaya anyway, which I like using cooked chicken for, so only used one thigh piece for this recipe.
I didn’t trust her method of cooking them, you’re meant to add salt and pepper, then raw dog them in the oven no oil no nuffin, after 30 minutes she says to cover and then cook for 20 more minutes.
I understand that you’re not aiming for crispy skin, as I suppose in theory you need moister from the skin to blend? But anyway this poor doomed piece was cooked separately from the others, which had oil and herbs, crispy skin but still moist and was delicious.

I think she was going for a pate vibe with this recipe. I’ve never made and don’t like it, but even I know that you use offal right? Chicken liver pate. You can’t just blend thigh, or as she casually suggests, breast and get the same creamy effect?
Let’s see (spoiler alert, you can’t).

Here it is! I needed more mayo than the recipe called for, I initially used the recommended amount for six pieces and only had one, it didn’t worked so I added a little more, otherwise it would not have blended in my magicbullet.
The result was a bit like tuna mayo, only very bland and powdery. It does taste sour from the vinegar too, not pleasant and I feel bad for anyone who wasted SIX chicken thighs making this.

Adding it to the peanut misery bread didn’t improve anything, just a generally sad experience. There’s nothing comforting or ‘buttery’ about this, it’s just sad.

Mistydog liked it and ate the lot, then again she’s been known to enjoy eating her own poo when given the opportunity, so maybe not the best advocate.

I’m going to have a look at the rating system and give the prices, so with my track record look forward to that in a month!

I let out a visceral grunt of disgust when I read those ingredients. Read your report with my hand over my mouth. Chapeau, tenderstem.

The fact she described blended chicken, vinegar and mayo as having the same qualities as butter, and it was published unquestioningly, makes me want to burn the bleeping world down.

I dislike her more every time I see one of her excerable recipes recreated.

Good work though. At least the lovely dog enjoyed it, whi h is a step above her usual culinary output!

I think Jack is aiming at making chicken rillette with this abomination. But with a relatively short cooking time and then adding mayo and vinegar (why????) instead of butter or rendered chicken large, it's never going to be a patch on an actual rillette. And a proper rillette wouldn't be any more expensive - fry off the chicken thighs in a pat of butter with s&p and herbs as you fancy, pop them in a foil covered dish and transfer to a medium oven (alongside something else to save fuel) for a couple of hours, shred the meat, pack it into ramekins and add some melted butter if needed - if the thighs are fatty enough you might not even need that. Stick it in the fridge for a couple of days before eating, and then spread on toast. That's proper comfort food.

She has a complete misunderstanding of how cooking and flavours work. And calling it chicken butter! On a par with her chicken porridge that contained no chicken, and her rosemary roast potatoes that contained no rosemary.

This hadn't even occurred to me, her recipe is that bad. Surely if you were a super frugal poor little food blogger you'd want to teach your audience how to cook a dish traditionally for food preservation properly. Instead she's made something that tastes bad, looks worse and won't keep.

I dislike her even more now. Everything she does is a worthless, tit copy. There really is no start to her talents.

On the plus side, Mr Beacon is now inspired to try and make proper chicken rillettes...

Truly it boggles my mind how she has managed to get away with publishing so many obviously bad recipes for so long.

TOOT TOOT!

There may be slop incoming this week if I can fit it in. I saw on the Wiki that I signed up a couple of years ago (!!!) to do the Greek style potatoes from Vegan-ish, so I’ll do that if anyone is still interested. Am also open to other suggestions of vegan slop.
