Bloody love a jacket potato! I’m a dedicated tuna Mayo girl but I always have a salad on the side and prawn Mayo is good on top of the salad (love a prawn cocktail so it’s best of both worlds to me ). I recently got crab sticks and smoked salmon to have in salads, that might be an idea to mix things up. Fish fingers are also lush with salad and jacket potatoes for something quick and easy.
My husband usually has chicken of some variety - peri peri, southern fried, bbq, grilled. He also loves beans on top or pulled pork with the salad.
reading this, I don’t know why I don’t eat jacket potatoes as much as I used to do. I love [ not all together] tuna Mayo ( needs something spicy in it) and sweet corn, cheese and coleslaw, chilli and crepe fraiche with a salad, I prefer plain and simple on potatoes, beans are too much fibre for me on a spud, they make my teeth feel funny!
To be honest any jacket topping which doesn't involve cheese is just lacking somehow In this house it's always 'what do you want on a jacket? - cheese and...'
Cheese and chopped spring/red onion or even caramelised onion
Chicken mayo salad
A stew with any lentils/chickpeas/beans/peppers/veg etc in chopped tomatoes with lots of herbs/spices (can be done in the slow cooker as well)
Mushrooms and bacon in a quick creamy sauce (Philadelphia with garlic and parsley works!)
Broccoli/Cauliflower cheese
