I'm going through a phase of having jacket potatoes for lunch every day, but i'm getting bored with my usual tuna mayo topping and need some inspiration!
What is everyone's favourite jacket potato topping?

Tuna mayo is my favourite, but chicken and avocado or cheese and coleslaw are good too!

Leftover bolognese with cheese is nice.
How do you cook your jackets? Olive oil and rock salt rub is great.

I make a vegan ‘tuna’ Mayo that’s lovely on a jacket potato! Mashed chickpeas, vegan mayo, lemon juice, red onion, sweet corn, capers, finely chopped nori and some dill.
I also love a bean chili on top too

Baked sweet potato with brie and caramelised red onion chutney if I'm feeling fancy 😋

Tend to have taco beans on a normal baked potato and haven't got bored of it yet

Tuna and mayo is mine. Probably not different enough but what I actually like to do is throw some sriracha into the tuna mayo as well to make it spicy!

Also, second whoever said chilli above - meat or veggie, both good.

Oooh love a jacket!
Leftover ratatouille & any cheese
Grated cheddar and big side salad of grated carrot, cucumber, cherry tomatoes, avo, olives etc
If you are feeling indulgent, could do a twice baked jacket

I'm also having these a lot recently. I love loads of melted cheddar and then about half a tub of finest coleslaw - I like it really chunky with thick mayo.

My husband likes cheap tinned mince and gravy with beans, proper comfort food.

Cheese and chopped spring/red onion or even caramelised onion
Chicken mayo salad
A stew with any lentils/chickpeas/beans/peppers/veg etc in chopped tomatoes with lots of herbs/spices (can be done in the slow cooker as well)
Mushrooms and bacon in a quick creamy sauce (Philadelphia with garlic and parsley works!)
Broccoli/Cauliflower cheese

‘Loaded’ potato, which is bacon, cheese, sour cream and spring onion. Ooooh I could go for that right now, even though I’ve just had my dinner!
