I make a vegan ‘tuna’ Mayo that’s lovely on a jacket potato! Mashed chickpeas, vegan mayo, lemon juice, red onion, sweet corn, capers, finely chopped nori and some dill.
I also love a bean chili on top too
To be honest any jacket topping which doesn't involve cheese is just lacking somehow In this house it's always 'what do you want on a jacket? - cheese and...'
I'm also having these a lot recently. I love loads of melted cheddar and then about half a tub of finest coleslaw - I like it really chunky with thick mayo.
My husband likes cheap tinned mince and gravy with beans, proper comfort food.
I'm going through a phase of having jacket potatoes for lunch every day, but i'm getting bored with my usual tuna mayo topping and need some inspiration!
What is everyone's favourite jacket potato topping?
Cheese and chopped spring/red onion or even caramelised onion
Chicken mayo salad
A stew with any lentils/chickpeas/beans/peppers/veg etc in chopped tomatoes with lots of herbs/spices (can be done in the slow cooker as well)
Mushrooms and bacon in a quick creamy sauce (Philadelphia with garlic and parsley works!)
Broccoli/Cauliflower cheese
Oooh love a jacket!
Leftover ratatouille & any cheese
Grated cheddar and big side salad of grated carrot, cucumber, cherry tomatoes, avo, olives etc
If you are feeling indulgent, could do a twice baked jacket
reading this, I don’t know why I don’t eat jacket potatoes as much as I used to do. I love [ not all together] tuna Mayo ( needs something spicy in it) and sweet corn, cheese and coleslaw, chilli and crepe fraiche with a salad, I prefer plain and simple on potatoes, beans are too much fibre for me on a spud, they make my teeth feel funny!
