For me, the easiest recipe I make is as follows:

Kidney beans
Black beans
Chickpeas
Tinned tomatoes

I put them all together in a pan, heat them up and put on a simmer for maximum of 10 mins, while stirring occasionally. I then add a bit of turmeric, lazy garlic (or finely chopped if you like, but best to chuck them in at the start of cooking) some salt, and a little bit of tomato ketchup to add a bit of zing to it. It's very simple and meat free for a fast meal. Serve it up with a flatbread or something if you like.

How about yours?

This is my go-to dish when I need comfort food:

* Pasta seashells
* Diced ham
* Fresh parsley
* Fresh cream (bottle of)
* About three handfuls of grated cheese
* Mushrooms

Cook the pasta and set aside to drain

In a large (even better, electric) frypan, cook the mushrooms saute-style (in butter); once done, add all the other ingredients and stir
Leave to simmer for around 20 minutes, occasionally stepping in to stir

Delicious!

Hot smoked mackerel with peppercorns - very versatile:

Heated in a quick homemade tomato sauce made with garlic, onions tinned chopped tomatoes and a bit of tomato paste plus seasonings. Served with pasta or rice and side salad or veggies cooked in the sauce.

Served cold - in a pasta, potato or rice salad. Flaked/broken and a dressing of choice added.

Warm - in a wholemeal bap with mayo and diced spring onions.
