I watched a few you tubes from the Curry Guy a couple of weeks ago and made his curry sauce base - can't say I was impressed though.
I've never used any of his recipes. But I know that I made a curry base sauce originally and then just tried to do my own thing with it, but I wasn't that impressed either.. so I bought the Misty Ricardo books and now know that I also needed to make ginger/garlic paste, sometimes an onion paste, grind all my spices etc.. it's a lot of cooking, but once you have your base gravy and the other bits done (and you can make loads so that there's spare) it's much quicker!

I LOVE curry!!

I tend to order a jalfrezi, korai, or sagawhalla, sometimes a bhuna.

I'm on a British Indian curry cooking group on Facebook as I'd love to be able to master that method of cooking. Keep pondering over "the curry guy" cookbook to try to but hear some mixed reviews.

Does anyone enjoy cooking curry from scratch? Base gravy and all? Would love to hear your experiences.

Absolutely starving now 😂

I love lamb curries! I had a rara gosht in a restaurant in Paddington and it was beautiful. I love potato fry as well, lovely crispy and caramelised spuds and spices 🤤 A south indian friend of mine taught me how to make idli and dosas, with a beautiful spicy peanut chutney. I love dals as well, real comfort food!

Im off to dishoom when restrictions improve in May . ..
I cant wait!!
If you’re in London, they’re doing 50% off between May and June at their refurbed Covent Garden restaurant. They’re taking bookings too if you can still grab a table!

If anyone is like me & cba to make your own sauce then this company is the closest I have found to restaurant tasting curry sauces. Seriously SO SO tasty, especially the madras one 🤤 The curry sauce co - I get them from Ocado
Just had a look at their website, very interesting, two flavours that interest me, problem is the pots serve 4 and we need to serve 2.

I'm pretty boring with curries and always order a spinach dhal. They are really nice though. I absolutely love naan bread which is probably the best bit of it all for me.

Do you ever use ghee (ie clarified butter) in your Indian cooking? I’ve never had the guts to use it (I try to avoid excess sat fats in my cooking) but apparently it would make a big difference in the final result and give a more authentic/restaurant quality. I just don’t want to start using it and loving it.
Oh no I’ve never bought or used it myself. Yes it’s the extra fat that puts me off. We only end up buying a takeaway once or twice a month as a treat so not so bad.

This thread has really made me want a chicken jalfrezi from Akbars in Manchester, the meat is so soft and tender. I've tried a few other Akbars, Birmingham and York, but Manchester always seems the best for me. Might have to drive down for a takeaway.

I think madras is probably my favourite! That's what I usually get if we're going to an Indian. I also really love korma too but found they are more hit and miss depending on the restaurant/takeaway.

We got some vindaloo jars of sauce from morrisons a few weeks ago for quite cheap and they were really nice. I did have to add extra chilli to mine though 😂

Have a look over their website and menu, its a bit like a tapas of indian dishes. Their cookbook is beautiful to read through as well. The restaurants themselves are really cool, decorated really nicely. Theres often very long queues to eat there. I had a booking once, but there was a 4hr wait for walk-ins 😂 The keema pau, black daal and chicken ruby are my favourites 🤤
Oh wow!! They look amazing. . Hurry up and open up Dishoom. Deffo on my list of go to's now 👌

I have loved Chicken Korma, ever since I tasted the real thing at an Indian restaurant, when I was a teenager. It is probably my favourite meal. Lately I've been trying thai green curries Sainsbury's do an excellent one - it is absolutely lush.

Apologies if I am telling you all something you already know, but as a fellow curry lover, (who could also eat it every day 😍) I was always trying to make curry like I'd get in a takeaway/restaurant. By joining some curry groups on Facebook, I found out that the takeaway curries (i.e. vindaloos, kormas, madras etc) are classed as the British Indian Restaurant (BIR) way of cooking. It is quite the process to make them, but it's so worth it, as you're more likely to get the BIR taste (if that's what you're looking for - I personally love a traditional Indian curry like a Dhal just as much as I love a vindaloo!). I have started using the methods from Misty Ricardo who has 2 recipe books out and is also on Facebook, Instagram and YouTube. Other members from the curry groups really rate "The Curry Guy" and Glebe kitchen amongst others.

Just thought I'd pass this on, in case it is helpful to anybody 🙂
I watched a few you tubes from the Curry Guy a couple of weeks ago and made his curry sauce base - can't say I was impressed though.

I’d go for a lamb rogan Josh or king prawn on puri with samosas, pilau rice and garlic naan. DP goes for butter chicken.

I like Hari! Was the Aktar@home good?
Hi, I liked it, flavours very authentic. They vary week by week the main curry, so you get a lamb or chicken dish, and loads of accompanying dishes. Lasted 2 of us 3 meals each. Around £70 so great value for Michelin starred cooking!
Breads were very good, instructions for all dishes easy to understand. Off topic but he also does a meat box which was amazing.

Do you have a recipe for your chickpea dish? It sounds lovely!!! Is it more satay style?
It's a bit of a rough mish mash of styles I think!

Roughly:
1 can chickpeas
1 can tinned tomatoes
(Add extra optional veg - i like cauliflower or spinach)
1/2tsp turmeric, 1/2tsp garam masala, sprinkle of: coriander, ginger (i would add in half a thumb of fresh ginger if I have it)
Chilli powder to taste
1tbsp peanut butter, stirred in
