Don’t you sweat your bollocks off? Mine would be plastered to my head in 5 minutes I would look like I had just stepped out the shower.

Yes but I'd sweat and it would go greasy even if it was up. Im a naturally sweaty person and have oily hair naturally so doesn't make a difference with that.

If she's running, I would assume it's because it's a lot cooler, I'm gonna start doing my runs early morning or evening because it's too warm for me otherwise, though I don't have her physique.
