WFH Breakfasts

I’m stuck in a brekkie rut!

When I actually went to work I just used to take peanut butter on wholemeal toast or some porridge

Now I’m at home I’m trying to make use of the time I’ve got to cook something a little more exciting.

But I’ve got stuck having the same 3 and it’s getting boring now.. I’ll have boiled eggs with some spinach or scrambled egg on toast if I’m starving, or granola with yoghurt snd blueberries. The odd bacon barm of a weekend

Any recommendations?

Omelette with spring onion and cheese
Toaster waffles with fruit (and chocolate sauce 🤤)
Mushrooms in creme fresh with a load of black pepper on sourdough
Pastries crossiants etc

I've been having the exact same problem 😅 I've challenged myself this year to try and stick to veggie options for breakfast
 
Overnight oats for me. Frozen raspberries, yoghurt, oats, more yoghurt, frozen "breakfast toppper" mix frim Tesco, and honey. Then I add some pumpkin seeds and gronola on top in the morning :)

My husband usually does breakfast so it’s a bacon roll, sausage in a roll or toast with melted cheese here. Nothing very healthy in his repertoire!

I fry mushrooms for my daughter and mix them with small amount of cheese, spread the mix in a tortilla wrap, fold it in quarters. Wipe clean the mushroom pan and toast the folded tortilla in the pan over a low heat, doing both sides then unfolding and refolding the tortilla, to do both sides of the middle of the tortilla. It’s a faff but really tasty.

Mostly poach eggs on toast bit I break it up a bit and will some days a have bacon sandwich or weetabix.
 
In normal times i have overnight oats monday to friday and then something that requires more effort at the weekend. I'm sticking to that now as it gives me structure - i personally find i miss the routine, so even thia kinda helps me.

I know i'm not exactly answering the question you're asking, but i feel like we're all just a bit bored and fed up at the min and for you it might be showing up in rethinking your breakfasts? Maybe by having routine and giving yourself 2 days for other things itll solve the rut you feel youre in?

On days I'm not working I love a Spanish omelette for breakfast - yummy!

Those waffles what you put in the toaster with Sweet Freedom choc sauce / peanut butter / honey
Granola with berries and greek yoghurt
Eggy bread!

Oatabix with a splash of milk, dollop of protein yoghurt, raspberries, blueberries & chopped banana. So tasty and fills you up right through until lunch (possibly later, depending on when you eat breakfast) Its great for those on a gluten free diet - I never get the bloating and uncomfortable tummy thing that I got with weetabix.
 
My everyday breakfasts are

Soft boiled eggs on rye bread with smashed avocado and or smoked salmon
Spinach leek and crumbled feta 2 egg omelette
Creamy mushrooms on toast (sliced mushrooms, light Philly, Dijon mustard, soy sauce or marmite)
Scrambled egg with diced peppers, red onion and a bit of cheese and hot sauce
I batch cook sausage, egg and cheese burritos for my boyfriend and freeze them for him to heat up before work cos he goes insanely early


I hate overnight oats they are the modern day equivalent of gruel 😂
