I think actually they do leave some things unfinished in that particular series. It's not entirely down to me chopping and changing in terms of watching episodes.
I went back recently and watched the end of the final episode, Jack's speech - Respect. It's a fantastic piece of writing and a great piece of acting. I think I remember reading that Simon Rouse said he was genuinely emotional delivering it.
I'm also still re-watching the series on U&W. Gina's departure episode is excellent. Again, the sincerity of the actors makes it very moving. Tony having overheard her talking to Heaton, knowing that she was leaving, and saying she was the best gov. And her last interaction with Smithy - a great scene and very credible.
