Assuming we get a Turkey, Boxing Day will be cold Turkey and chips or a baked potato with some Beetroot.
In the end the Turkey will end up as a stew, the same will apply if we have Lamb instead of Turkey.
Cold meets and picky bits. Also whatever my husband brings home on Xmas eve. A few years ago he got a £50 beef Wellington for £5, that was a good Boxing Day!
We have our polish meal on Christmas Eve and Day. Boxing day is a roast beef, yorkshire puddings, potatoes, carrots, parsnips, stuffing. And for dessert, sticky toffee.
Always have leftover Christmas dinner on Boxing Day for lunch time. Then we have a family party that night and it changes each year for tea. This year as there are fewer of us we’re having a cold buffet to keep it easy.
To then use up any leftover Turkey I’ll do a curry or pasta bake.
