I see it comes in a few sizes - Would the 125ml be enough for a ladies leather jacket?

Yes it would be enough for 2 applications (you have to put 2 on initially)

I'm considering buying a leather jacket and been reading online that I should spray it to protect it from water damage.

Can anyone recommend one that they have used?
