You can get tinned rhubarb- Tesco, Asda and Prince's fancy, but not Del Monte fancy ( cheaper than buying fresh at this time of year)

I'd drain the rhubarb and maybe add a bit less buttermilk until you get desired texture ( the acidity of the rhubarb will act in same way )
