Have you ever baked your own bread and if so what is your favourite recipe?

I have baked the no knead bread and it turned out really good but am looking for new ideas.

I've always made soda bread because no yeast, no kneading, no proving required. Anything that's quick. If you look at the work that needs to go into croissants and danish pastries to me there's no point. I'm happy with pillsbury dough boy of shop bought. Same with bread, if its going to take all day I can't justify the time just to end up with one loaf.
You tube has some great quick bread/rolls recipes, including soda bread.

I make a classic white loaf every week, recipe is 500g strong white flour, 350ml warm water, 7g yeast, 5g salt, knead for ten minutes, prove till doubled in size, usually an hour in my kitchen, then shape and put in tin, then prove again until it's doubled in size again, usually about 50 mins. Homemade bread is great, I can't eat supermarket bread nowadays. I also make crumpets occasionally but have yet to perfect them

Sourdough is my favourite! It is a real commitment though...I do love it but I’m not 100% sure the starter maintenance is worth it 😅

I love homemade crumpets, can’t hack shop ones now - what do you need to perfect?

Yes and we don't really buy bread from the shops as that often anymore.

I normally bake bread once or twice a week and husband makes pizza dough every Saturday for pizza night.

My favourite bread is ciabatta with olives ❤

I love homemade crumpets, can’t hack shop ones now - what do you need to perfect?
The bottom is always overcooked while the top stays raw and they take way longer to cook than the recipe says, do you think my batter is too thick?

Possibly, which recipe do you use? The Delia Smith one works a charm for me. But, if the bottom is burnt and they’re not cooking through, that sounds to me like your pan might be too hot. It should only be a moderate heat :)

I keep the heat on medium. I'll try the Delia Smith recipe next time make them. The recipe I was using was Felicity Cloak's from the Guardian
 
i bake my own bread and usually go for focaccia, i don't use scales and have through trial and error worked out a great recipe - plain flour (big sieve), couple tsp dried yeast, handful fine semolina, evoo, water (mug full), a handful of flaky sea salt, and i roll it in coarse semolina. big trick is having the dough as wet as possible - as wet as you can manage without it becoming a horror story to knead. I mix it by hand, using Mary Berry's 100 rule which i recently found out about - knead it 100 times and i start from when it's already come together in a ball, then 100 kneads. I divide into balls - 2 i usually roll out to small pizzette and add herbs, olives, baby tomatoes etc, and prove (once) for 2 hours then bake. the remaining dough i stick into a freezer bag and keep in the fridge till i'm ready to use for pizza, more focaccia, flatbread, or whatever. lasts up to 5 days. no need to prove first, but you must prove once you take it out of the fridge (again i roll it out first depending on what i'm doing with it). i could not live without focaccia!!!

I bake a white loaf every few days. The recipe I use is 500g bread flour, 10g salt, 2g dried yeast, 10g butter and 300g warm water. I put it all in a mixer for 10 mins then leave to prove for 2 hours, shape the dough and put it in the tin and prove again for an hour. Cook on 180 for 20 mins.
